Sunday Brunch Raw Vegan Donut Holes - Recipe too!
RAW, VEGAN & SUGAR-FREE! DONUT HOLES!
If you love donuts but they dont love you back, join my club :) And create an amazing RAW, organic, sugar-free, vegan donut hole nonetheless to be enjoyed fresh with your favorite nutmilk chai! These are so great because they dont excessively add to Kapha during the heavy kapha season when so many people love donuts. We'll be delving into all sorts of foods that help and hinder a sense of wintertime health during our Tiny Little Spark Wintertime Transformational Immersion this January-May, 2013! SO...onto the recipe!
For the holes themselves:
1 Cup raw almonds, soaked for about 4 hours, drained
1 Cup Medjool dates, pitted, soaked for 4 hours, drained
1/2 cup Nutiva Raw Super Seed (Smoothie) Blend - you can omit altogether or replace this with ground raw oats
1/4 cup gently melted raw coconut oil
1/4 tsp ground nutmeg
1/4 tsp ground ginnamon
1/2 tsp pure almond extract
1/2 tsp pure vanilla extract OR 1/8 tsp raw vanilla powder
Pinch Himalayan mineral salt
For the coating to roll the holes in:
1/2 cup Coconut Secret Coconut Crystals
1/4 cup cinnamon OR coconut shreds OR raw cacao (depending on what you enjoy taste-wise the most - the ones pictured here are done with cinnamon)
Combine all ingredients in the first list in a blender or food processor. Then, roll into sticky little balls and coat with the ingredients from the second list.
Pop into the dehydrator at 110 degrees for 4 hours. OR put into an oven on lowest setting with the door slightly ajar for one hour. Eat immediately or store in an airtight container. Makes about 20 donut holes.
