OOOOgah Chaga Morning Tea!
Alright - Chaga Tea. I've promised for a while that I'd dish on my chaga tea making secrets. So here is a wonderful, super yummy tree-mushroom tea that will replace coffee or black tea for you. And if you haven't heard yet - chaga has been scientifically proven to help with cancers of the brain, stomach, uterus, cervix, lung, skin, and many more. It is also anti-fungal, anti-oxidant, anti-microbial, anti-bacterial, hypoallergenic, anti-inflammatory, anti-tumor, and all-around pro-living! The chunk of chaga you see below came from a recent back-yard hunt - and weighs about three pounds. Just for reference a small bag of Maine woods wild chaga at a local health food store went for $27 and change! So, its well worth your while to get into the woods and hunt for it on your own!
So, the easy tea recipe:
1 large chunk chaga (about 6 inches) broken up into smaller pieces
16 cups pure spring water
1/2 teaspoon raw vanilla OR 1 vanilla bean
1/2 cup raw goji berries
Ground cardamom to taste
Boil the chaga gently using a large, heavy steel pan (as seen above) in the water for about 45 minutes, covered slightly ajar the whole time. At the 45 minute mark, add the goji and vanilla and let very gently simmer but not boil for 10 minutes - always best done over a wood-fired stove :) Then cover and let set overnight. In the morning, strain off and store in the fridge until you're ready to use - heating up a cup at a time and sprinkling a little bit of ground cardamom on the top for ultimate drinking & sensory pleasure!
My dad especially loves this tea with a teaspoon of raw honey and a dollop of raw cream from Smith Family Farm. I tend to drink the chaga sans milk or sweetener - but you can choose your own way! No matter how you take your chaga, it's bound to enhance your wellbeing and sense of wonder!
